Monster Cookie Bars

Monster Cookie BarsOatmeal is one of those versatile ingredients that can be used in a variety of baking recipes but also some savory recipes. These bars are super quick to whip up but keep the normal texture of a monster cookie. It has the chewy texture, while still having a cookie flavor and feel to it.

Monster cookies were one of my favorite cookies growing up. You get to have chocolate chips and M&M’s and peanut butter, yes please! Playing with the neighbor kids we would work up an appetite and their mom would always have monster cookies in the freezer.

Monster Cookie Bars

Ingredients:

¼ cup (4 Tablespoons) butter, unsalted

½ cup peanut butter

¾ cup brown sugar, packed

2 eggs

1 teaspoon vanilla

1 ½ cup oats, old-fashioned or instant

½ cup flour

½ teaspoon baking soda

½ teaspoon baking powder

1 cup chocolate chips

½ cup m&ms

Directions:

  1. Preheat oven to 325. In mixing bowl, cream the butter, peanut butter, and sugar together until light and fluffy.
  2. Next, add eggs one at a time until combined, then add the vanilla.
  3. Combine the oats, flour, baking powder, baking soda together and then pour into the mixing bowl. Stir in the chocolate chips and M&M’s.
  4. Pour the batter into a 9×13 greased baking pan, bake until golden and set, about 18-22 minutes.

Note: This batter is thin in the pan, but don’t worry it will puff up a little. The bar should be a little on the thinner side so that you get the chewy texture.
