Breakfast

I am a night owl, always have been which is a struggle for me to get up in the mornings. During my school years it was very hard to wake up and get to school on time. There were multiple days I would barely make it to my class before the bell would ring. Luckily, I had a very nice teacher who very rarely marked me tardy. Breakfast burritos were normally what I ended up grabbing on the days I was running late, to keep from having my stomach make noise. The frozen burritos from the grocery store were the ones I would eat, so quick to throw into the microwave. For a quick and easy, but also somewhat healthy breakfast. They never had enough filling always too much tortilla shell. I would usually throw half of the tortilla shell away, because, it would get hard and there wouldn’t be any filling left.

This is my take on them with a little more stuffing inside of them. While still being a perfect for on the go breakfast, if you make them ahead of time. Even though now I normally have time to make breakfast in the morning. I still like to still be able to have stuff made ahead so I can have an easy breakfast and don’t have to do as many dishes. Allowing me to easily get breakfast and start on whatever tasks I need to get done that day. I started making these breakfast burritos for school, they were always a quick way to make sure that I still ate breakfast while not having to get up earlier to make it. This recipe makes a big batch so if you don’t need our want as many you can easily half the recipe.

Ingredients
22 eggs
1 cup milk (I used 2%)
1 cup green pepper
1 (14 ounces) can green chilies
2 cups cooked sausage
1 cup bacon, cooked, crumbled
4 cups hash browns
2 cups of cheddar cheese
28 small shells
Directions:
1. Cut the green pepper into small, dice size pieces. Put them in a pan a cook them until soft and then add the green chilies.
2. Crack the eggs into a bowl and whisk them with milk until fully combined.
3. Then add the bacon and the sausage in with the eggs.
4. Put the hash browns in the pan with the chilies and pepper.
5. Pour the mixture into the pan and cook until all eggs are fully cooked, about 5 mins.
6. Then turn of the heat and mix in the cheese.
7. Get the shells and scoop the egg mixture onto the shells and roll up.
If you are eating them right away the mixture is already warm so you can pop the burrito into the microwave for 10 seconds just to heat the shell up.
If you are meal prepping, you can place the burritos right next to each other on a sheet pan and freeze. Once frozen you can move them to a zip lock bag and store in the freezer. They can be stored for about a month in the freezer.
When you want to eat one then you just take it out of the freezer and heat in the microwave for about 3 mins. I like to start it for a minute on half power and then after that heat on full power.
